Strawberry Cheesecake Muffins



Ingredients:
  • 350g Plain flour
  • 1 1/2 tbsp Baking powder
  • 140g Caster sugar
  • Finely grated rind of 2 oranges
  • 1/2 tsp salt
  • 2 eggs
  • 250ml milk
  • 85g melted butter

  • 175g half-fat soft cheese
  • 3 tbsp caster sugar
  • 6 small strawberries, halved

Method:
  • Preheat oven to 180 fan oven/200/Gas mark 5. Line a muffin tin with 12 paper cases
  • Sift flour and baking powder into a large bowl, then stir in the sugar, orange + salt
  • Beat the eggs and milk together, then stir in the butter + gently mix the dry ingredients to make a loose, slightly lumpy mixture. Do not over mix!
  • Mix together soft cheese + sugar
  • Half-fill paper cases with the muffin mixture then push half a strawberry into it.
  • Add a dollop of the cream cheese mixture, then cover with more muffin mixture
  • Bake for 15+ minutes till golden brown on top.
